Breadcrumbed Grilled Prawns

A simple classic Italian dish perfectly suited to cooking over the hot coals. A weekly favourite in our house during the summer.

INGREDIENTS

  • raw prawns

  • breadcrumbs / panko - enough to coat the prawns

  • olive oil

  • Minced / pressed garlic

  • finely chopped parsley

  • finely chopped chilli (optional)

METHOD

  1. a couple of hours before you plan to cook, season the prawns with salt and pepper in a bowl, add enough oil to coat then add the garlic, parsley and chilli

  2. cover and leave in the fridge for about 90 mins

  3. toss with breadcrumbs until well coated and carefully thread on to skewers. You can press more breadcrumbs onto the prawns once the skewers are made

  4. lay onto a hot, clean grill and cook for a few minutes each side until golden and crispy

  5. eat immediately
